Our Fermentation Philosophy

We honor the rhythm of the vineyard by allowing nature to guide our winemaking. Our wines are crafted through traditional whole-cluster fermentation, a time-honored method where intact grape bunches, stems and all, are fermented together. This approach deepens character, brings elegance, and weaves complexity into every vintage.

With minimal intervention, we let the grapes and the terroir speak for themselves. No shortcuts, no unnecessary manipulation, only the gentle hand of tradition. Once fermentation is complete, our wines rest in 100% French oak barrels, then continue their quiet refinement through extended bottle maturation, gaining harmony and depth over time.

The result is a wine that is alive, vibrant, structured, and made to age with grace.

Chenin Blanc

Anne Souchay’s spirit was one of quiet resilience & refined strength. Born into a lineage of merchants and lawyers, she carried grace and intellect across oceans. It is in recognition of her aristocratic bearing that this wine carries her title — Madame Souchay — a tribute to her dignity as much as to her courage.

This Chenin Blanc honours her through its elegance and depth. Grown in Paarl’s granite-rich soils and ripened beneath its generous sun, it offers an inviting nose of biscuit and tangerine, followed by delightful notes of marmalade, stone fruit and honey. Despite its compelling depth, the wine retains remarkable clarity, underpinned by an almost rapier-like line of tangy freshness. This balance reflects Anne herself: deeply anchored in her heritage, yet shaped and transformed by a new land.

Susanne Foucher

Red Blend

Susanne, daughter of Philippe and Anne, was born on South African soil. She was the first heir to a new chapter of the family’s story.

This red blend celebrates her role as a bridge between the Old World and the New. Cabernet Sauvignon, Cabernet Franc, Malbec and Petit Verdot, shaped by Paarl’s distinctive terroir, come together in a wine of vibrant garnet hue, with aromas of ripe berries and layered flavours of cranberry and dried herbs.

It is a wine of balance and promise, just as Susanne embodied both heritage and hope.

Philippe Foucher

Syrah

Philippe Foucher was a man of conviction, a farmer who cultivated the fertile soils of the Loire Valley, yet he was bold enough to cross oceans in pursuit of a new destiny. This Syrah reflects his strength and perseverance.

On Paarl’s warm, rugged slopes, our Shiraz develops bold aromas of dark winter berries, complemented by a whisper of restrained oak. The palate is silky and smooth, revealing layers of ripe plum and blackcurrant jelly, with subtle hints of spice and pepper.

It is a wine of structure and intensity, mirroring Philippe’s steadfast resolve.

Bernard Foucher

Cabernet Franc

Bernard Foucher, father of Philippe, embodied the firm hand of tradition, a guardian of the old ways whose influence extended into new generations.

This Cabernet Franc bears his name, honouring both lineage and strength. Grown in Paarl’s decomposed granite soils and on its sunlit slopes, the wine displays a vibrant ruby-red gleam, with a generously fruited nose of currants, ripe plum and cherry.

It is a wine of power and presence, echoing Bernard’s enduring legacy.
